Well it depends on your skill level. To the normal person's eye, Anything folded out of paper looks awesome, as not a lot of people have the skill level or patience to fold anything. Trollip has some cool animal models that look good in exhibitions. Also just browse around on flickr
I'm sure you can find some cool, inspiring models!

I would rather fail trying than fail without trying....

One thing i have learn is make it big. Indians always get awed by the bigger exhibits and dont have the patience to appreciate the smaller ones. Speaking from experience.

As chesscuber said, the best origami model for the exhibition is the big model. But not big, but BIG. Do not fold anything from the paper less than 70 cm (the easist biggest square to obtain, just buy standard paper 100x70 cm and cut it).

Any models can be used in origami exibitions. Kids creating simple origami designs can be motivated with the exibitions, while for the professionals the exibitions can include 3D models.
