I voted sinks. simple sinks are ok but like someone else, I found Lang's Praying Mantis a torture to fold due to all the bizarre sinks, especially when folded from 15x15 cm paper (although the result was quite nice). However, I also agree with others that what is even more annoying are the two words: "unfold everything"

Really? Closed-back hex twists? I find those extremely easy. Open-backed hex twists on the other hand... I find those rather annoying.

It's not any particular type of fold that annoys me, but modulars drive me to tears. The endless making of units drives me insane. It's like working on a production line.

Repetitive folding of one sheet is fine, though. I really enjoy folding Eric Joisel's Hedgehog, and that's quite repetitive.

I'm fine with dividing a square into odd ratios, but when it's a small section of the paper, I cry.

Squash fold the rabbit ear 4/7 of the way...

From the ones that are mentioned on the list, It would be repeat on other side. Especially when the diagrams aren't clear, because then it's a real pain to flip the diagrams over. It also annoys me if you have to repeat a huge amount of steps! :x But like most people, The unfold everything really bugs me.

I'm all with Nathan. Hate those things. And you should try folding Lang's Skunk! It's full of that. Hated it.

unclear landmarks are the bane of my existence. In a really minimalist Yoshizawa piece it means the difference between a tiger that looks alive and a tiger that looks like an ox...

i agree that unclear landmarks can be a pain in your neck but you can also see it as an challange. I mean if you rally like to fold a model you will probably try to find out where the exact landmarks are. and this can possibly be of good user for further models :)
