You can for example try the books listed as "complex level" on Nicolas Terry's shop: http://www.origami-shop.com/books-books ... 6_217.html
or some of the Japanese books: http://www.origami-shop.com/books-japan ... 6_211.html
It looks as if quite a few of the Japanese complex level books are out of stock right now, though. Origami Insects II might keep you busy for a while, though. :)
[Of course these books are also available from other sources.]

If you like complex folding, you might also enjoy tessellations: http://www.akpeters.com/product.asp?ProdCode=4513

Finally, while complex folding can be a challenge, I think folding models to perfection is another interesting challenge. This includes experimenting with paper, and getting that expression to the face of the animal, etc.

If you're up for it, you can also have a try at designing your own models. "Origami Design Secrets" by Robert Lang includes superb guidelines on different techniques - and also a couple of diagrams for complex models that demonstrate those techniques.
