It depends on your skill level. If you want to practice, choose a model that's JUST above your skill level. If you choose something easier than your skill level, it's not going to help much. If you choose something at your skill level, it's a little bit better. By choosing something SLIGHTLY above your skill level, you'll get better. Hope this helps! Don't choose something too complex, though. That will just make you confused and frustrated.

Edit: Take this advice at your own risk...

You keep making things until you like the way they look. There's no shortcut to finding the right way to hold and balance the paper to make the creases nicer, it just takes time.

I'm gonna have to disagree with that. Any model can be practice. It just depends what you wanna practice on. If you need practice folding diagrammed models, fold diagrammed models. You can be able to fold mere impossible Cp's, but need help with shaping. So if you need help with that, look for some maybe expressive but not complex models.

In my opinion, origami is a lot like music. I play piano, so I have to practice different things. I have "warm ups" ( Maybe easy practice cp's or diagrammed models ) then I have the main thing i'm practicing, my song (maybe a hard model you are really trying to perfect) then I have my fun thing like chord music (something that is maybe easier that I can interpret my own way and make it in my own style)

So think about it. There's a lot of different areas you can practice in. I can give you a few suggestions if you tell me what you are trying to practice.

That still doesn't help me a lot though. What difficulty are you? like what kinds of models do you wanna fold?
