This one is rough. I can't seem to do step 21, where you unfold the single layer. Has anyone tried this? Any tips?

Is this origami insects 2 or 1?

I think you mean on page 83...
This fold is very similar to This one
You unwrap a single ply of paper. Hard to explain, but once you know how to do it, it is really easy.
