I have one sheet of 75x75cm paper and I want the most productive fold I can get. So which one is harder in your opinion? Bahumut or Ancient Dragon.
Of course I am talking about with use of diagrams, not CPs.

I have folded 2 AD both good folds, for the Bahamut, men! I have tried this thing may be more than 5 or 6 times with no satisfactory results.
I can bet the AD to be a little easier to fold than the Bahamut.
For the size of the paper you will use I think there is a video on youtube showing Kamiya folding a Bahamut from a 70x70 cm sheet.
For the AD I'd go for a biger sheet of paper.

From what I've heard, that seems to be the case. The Ancient Dragon is easier to get a nice result than the Bahamut...

though i never tried folding bahamut i did fold ancient dragon. if i remember correctly the folds are very similar but i think the head in A.D. gets much more complicated than bahamut(8 horns compared to 5). pretty much the head is what sells the model in my opinion.....
If this is your first time folding the models i would recommend smaller paper till you get past the half-way mark. you wouldn't believe the number of mistakes you can make in precreasing

Well i would say the steps for bahamut are easier than the AD. The bahamut is harder to get a nice looking model, because up until step 239, the model is completely FLAT. And after that i found its quiet hard to make a nice looking 3D model (that stands on its own). Whereas, the AD is a very long-winded fold, but pretty easy model to shape (in my opinion). Just make sure u fold every step as neat as you can, it will help in the long run

and remember both models are challenging
