My two favorite designs to fold right now are...

1) Little Terrier by Francisco Javier Caboblanco

2) Swan by Akira Yoshizawa

They don't require too many folds, allow for some shaping, and are, well. elegant! If you know of the two above, you know what I mean. I'd like to find more models like this. Any suggestions would be most appreciated.

The top one that I'll say that is published as a CP/Diagram is The Swan by Hoang Tien Quyet.
The one that I only know as a model and not a cp/diagram... Anything by Obelisk. xD

I would say one of the most elegant models to both fold and look at, would be Eric Joisel's rat, a quite easy model, but with that final touch that elevates it to a true gem of origami, followed by Robert Lang's Elephant from origami design secrets, a clean-cut model, smooth and efficient, that is simple but effective.

Mr. Issei has models that show elegance not only in the finished shape but also in the folding process itself which is very impressive.
I like Montroll's single square polyhedrons, and the kawasaki snails

Oh!, and I forgot to mention his Koi as well, but you have to use a pretty heavy paper for it (I used 25gsm unstarched/no MC kozo for it this morning, and it turned out horrible. ) I would recommend wyndstone marble/ zanders elephant hide, if you can get it in your region

The two most elegant models I've ever folded are Swan by Hoang Tien Quyet and Koi by Sipho Mabona.
