Hey there and welcome to the forum!
I would gladly try to help you but the diagrams you uploaded have such low resolution that I can't read/see it properly. And you need to specify the step you are having trouble with for me to understand your problem. Also, I believe this is the hummingbird designed by Robert Lang and these diagrams are in Origami Design Secrets. I don't think you should be posting these here. That might be illegal.

If by "bottom folding" you mean the steps at the bottom of that page, steps 25 26 and 27 are all pretty simple. Steps 27 and 25 are simply moving the flaps over so you can work on a different part of the model. Step 26 is just doing steps 18 to 22 on the other side.
If by "bottom folding" you mean tucking the belly into the neck on step 40, then just read the instructions. If you can't get it to tuck in and stay tucked, then I would recomend just using MC or wet folding to get it to stay in place.
Can Cebeci is right, I don't think those diagrams are legal.
