Animals that haven't been done...yet

Flame_Kurosei that is great list. That's one of the prettiest fishes I've ever seen. The Civet looks very nice, looks like a combination of other animals. That oar fish, would indeed be nice and doable. A colorchange for the dorsal fin along the enire body and some small flaps for the points sticking out the head.
For that arrow crab you're gonna need the thinnest paper available!

I seem to remember seeing a zebu somewhere, maybe by Trollip. And I saw an oar fish on someone's Flickr.

@roodborst Thanks--glad I somewhat helped. I completely agree with the arrow crab needing thin paper though.

EDIT: I just typed "zebu" and "oarfish" and "oar fish" into the origami forum search and the animal didn't come up. Also, "zebu" doesn't show up on search for Trollip's flickr. I'm guessing it was somewhere else then, or in a different language. Do you happen to know where they were though? I'd really like to see them sometime.

Maybe I remembered wrong; it's hard to say. He's done so many antelope-type animals they all run together after a while.

Alright, a few examples for you! These might have been done in origami, but I have not come across examples. If you want a challenge, several could be colour-changed.

There are actually a bunch of egrets, not sure if it is the 'little' one.

Spoonbill
Has not been done! It got a very distinctive beak, so it would make a nice model

drongo
Couldn't find this one either. Is it a type of swallow?

There are a few models of lyrebirds

Frigate bird
A model does pop up on google, but it has three colors a seems to be more papercraft than origami, so this one counts aswell! The Red chest sack seems pretty interesting indeed to incorporate in the model, with a colorchange!

Lapwing
Seems easy enough, just make a model with two feathers sticking out of the back of the head.

Avocet
Also a very distinctive beak. Maybe a crane model can be altered to look like this. Just thinking out loud.

This is my sixth fold of the model. The first few had better manes but this latter one had a more precise color change, I noticed the face was partially black also in some pictures. I made some Tissue foil especially for the maned wolf. The legs are still to short to my liking btw.

I already knew, that Roman Diaz did this model. He had a Crease Pattern in one of his books. Also if you can't do a CP (like me) here is a video by Tadashi Mori:

Please note that in this video, he only shows you how to make one of the legs. I made this one from the video with the sound of and ended up with a one-legged kiwi.

So the Rock hyrax was valid, but the most interesting to me was the flycatcher. Although it has already been done it got some nice features to make it stand out.
And it's great to see that indeed not all birds are alike and that they are worthy of making a model!

Second and third are to the origami model. The second one is really great. Actually found this one myself recently and have been looking for the diagrams, this David Lanque has got some really nice animal models btw

Northern Hairy-Nosed Wombat
the wombat in general has not been done, not the five step model that could be anything that popped up on google. I'm surprised I think that should be an animal that deserves a model.Cuteness is off the radar

Seychelles Sheath-Tailed Bat
This specific type of bat has not been done but there are alot of bat-models out there.

Javan Rhino
If I'm correct this also the white rhino.

Golden Tabby Tiger
Also I just recently discovered this animal, on my search for origami models I've been delving into different animals aswell. I must say this has to be one of the most magnificent looking animals I've ever seen. Again this specific tiger has not been done. Turtles tend to be more aquatic, with webbed feet and the like, whereas tortoises tend to be more of the arid regions, with their rounded feet. Also, the tortoise is a land-dweller, where as a turtle could also live in the sea.
