I don't think the Origami Fantasy one is hard to fold, either.
However, it is VERY hard to get the final model to look good!
To be honest, I prefer Montroll's stegosaurus - it can be folded from A4, is formulaeic enough to memorise, and is instantly recognisable as a stegosaurus.

I once set up an origami PLC. But the business folded.
I like Montroll's stegosaurus too, I already completed it.

35*35cm is good for fold it (my opinion)^^
