Hi! I'm pretty new to origami, I've been folding about a month now. Here are a few things I've been doing. (Don't expect too much, lol.)
Gato. I skipped most of the final shaping folds as I'm still learning at this point:

My wife likes penguins, so I folded this for her:

And of course the earlier version of the Kawasaki rose. I haven't tried any specialty paper yet, so here are (clockwise from left) regular copy paper, copy paper with red printed on it, red wrapping paper, and red copy paper.

I'm still working on the new rose and hope to be able to finish it soon. This site has lots of great info and I look forward to learning and improving.
