I've also been enjoying everyone's Roman Diaz models they've been posting. Now I'm going to have to add Origami Essence to my Christmas list!
At PCOC a few weeks ago during one of the late night folding sessions, I saw this cute little model of a VW Bug. I'd seen it online before, but in person it just captured me. I tried finding the person who folded it, in hopes of getting them to teach me, but was never able to. However, as I was browsing the books at the store there, I came across Charles Esseltine's book "Origami Unusual". It had a picture of that little car on the cover! I was so excited. Needless to say, I now have one more book in my collection. And here's my fold of the car:
And while I'm posting pics, I wanted to share my rendition of Kamiya's Lion:
And my school of 13 of Won Park's dollar Koi:

My latest design: Shrimp, version 3.1. This design is, I feel, significantly better than the other two that I have designed. First of all, this one has longer antennea. Second of all, it has flippers, as well as legs (rather than just flippers). I liked the design method of version 1.0, but was trying to figure out how to get flippers. Eventually, I decided to try the dorsal spine sinks from Kamiya's Ryu-Zin 3.5. This worked out ok, but I am still not satisfied with the number of flippers.

The wings still need work, but other than that I really like this design. Its got a really simple base too, so diagrams could be a possibility in the future
