I've been folding most of the models from "Origami to Astonish and Amuse", and have managed to fold all but the eight interlocking rings with 6-inch kami (woohoo!)

This one was made out of 28- inch butcher paper, it turned out to be very laborious. It took about eight hours, butcher paper is way too floppy to make this sort of model easily! It doesn't collapse very well, either... oh well, it looks cool.
My colleage (girl) wanted to have earthworm, so I "folded" this one to her. But she told me, that she want to have right origami earthworm. So, another possibility is on you...

Even though the CP is exactly the same, I didn't follow the intended flap usage (it's always good if you don't have a finished model as orientation and can make more use of your own imagination). The main reason for that was that I wanted the front of the model to be closed but that wouldn't have been possible (at least I didn't see a way to do it) with the original flap distribution. I could also use the head flaps more conveniently this way.
Therefore the dorsal fins ended up in front and were used as belly pleats (which gave kind of a shrimp-like body). The auxiliary "detail" flaps were used for the fins on the back.
I always thought that most depicted mer-people are too human, therefore mine is everything but human. He also doesn't need any man-made weapons like tridents, he has enough spines (poisonous of course) to stand up (or swim up ) to his opponents.

Like, ohmigod, Elvis is hidden in this CP!!!
Actually, an Elvis is something I'd been planning to work on for a while too - guitar, sideburns, microphone and classic pose. A CP that captures all of these shouldn't be too hard to come up with.

I once folded Komatsu's horse (the simple ugly one not the nice one) trying to fold his macaque from a CP I mistakenly took thinking it was the macaque's. I was trying to fold the macaque and it did not work but since both models have four legs I rearranged its pose and there it was the ugly horse.
