Color changers mean...

Do color changers mean just areas where you use the other color of the paper, and have it designed that way?

Generally, yes. Color changes using only origami technique will display the other side of a two-colored sheet. This is done by the basic design. A great example is Hideo Komatsu's 'Tiger', all of these stripes are achieved by showing the back-side of the paper with the basic design incorporating that idea from the start.

"Color changes" are also possible by painting, but this isn't as commonly accepted for achieving a two-color model.. I guess if you go down that road you can paint it however you want..
