For mathematics, look up Robert Lang and Eric Demaine. For counter examples, see Eric Joisel and Michael Lafosse. Although Akira Yoshizawa was an engineer, I think that his Origami was elevated beyond math. I don't think that Giang Dinh creates origami with any math that I know. Origami synthesizes from both directions ;-)

And, yes, the majority of folders are male vs. female. But, I believe that the majority of female folders have made outstanding contributions, greater than their proportions. See: Lillian Oppenheimer, Tokomo Fuze, Patricia Crawford, Ligia Montoya, Sara Adams, and Anna Kastlunger as examples.
