You could do both. Then release the diagrams for the simple one straight away and keep the complex one for the book.

I have sent a CP for my new dragon, and I'm still working on those unicyclist diagrams.

If someone has already released a CP, could they submit diagrams to the Christmas book ?

If the diagrams haven't been published before, yes. The CP is no full set of diagrams therefore the diagrams count as different. On the other hand I wouldn't accept a CP for a model who's diagrams are already published.

Is it still too early for teasers? Maybe someone who is still in doubt of sending (even doing) his/her diagrams, might get motivated if some of the models that are going to be in the book are mentioned.

Yes even if it is only a CP and the picture of the finished model.
I didn't make my request for the teasers just to publicise my models but anyway, the book will include the CP for reinventing the wheel
and Yo-Yo V.1.1.

If you have a model that you're proud of, it really IS worth spending the time to diagram it normally. If you make photodiagrams, nobody will take you seriously; if you draw a CP, only a handful of people will ever fold from it.
And if it's not a model you're proud of... then why are you submitting it to the book?
I guess what I'm trying to say is that photodiagrams aren't really worth the time they take. Making a good set of photo diagrams takes about as much time as a sketched set of diagrams for me; Computer diagrams take longer, but the versatility and clean look is more than worth it.
