Grizzly Bear (I like your new design more than your Polar Bear)

My favourite Quentin Trollip book would include:

Coconut Tree (one of the two best models)
Mermaid 2 (the second of the two best models)
Pegasus (I know it is a horse, but it is wonderful)

Even if you have already published some models, I think some would show good design themes, if you have permission to re-publish. Also, I have seen other authors (Momotani, Lang) publish models, then publish variations or improvements in follow-up books.

So, I think your basic horse might be OK. In the design book, I would like to see a variety of models and their progressions, in addition to the horse.
