So I'm having trouble making the unsink of step 31 look good. Every time I try to do that fold and flatten the model again, I get a lot of extra folds and creases. Any tips?

Don't worry about fudging it flat--it won't affect the finished model. But as long as you rearranged the layers correctly, you shouldn't have a problem.
