What kind of paper should be used for what complexity levels and how can you tell what kind of paper you have if the package does not say?

Concerning the second question: Open the package and feel the paper when noone is looking ;-)

When looking for paper you shouldn't just limit yourself to special origami paper. Just look for big rolls of paper in stores, and like daydreamer said, remove the plastic for a bit and feel the paper.

What you're looking for is thin paper that holds creases well and is easy to shape. (so bending layers of paper makes them stay that way) Preferrably in large sheets/rolls so you can cut out squares of the size you need.

I've spent lots of time browsing all kinds of stores for origami paper, and found that paper that isn't meant for origami works just as well. Or maybe even better because there isn't much origami paper large enough to fold very complex models, not over here anyway. And origami paper often has all kinds of annoying colours, which I don't like.

The complexity level of the model does not affect suitability of the paper. Only the model itself. You can choose foil for one model with certain complexity, but for another one with corresponding complexity should be better to use only big sheet of kami or hand made paper...
