I'm still working in the new origami blog. I'm starting to think about links, that's why I wanted to ask you: which would you say are the major origami websites out there? Which are those origami websites that every origami enthusiast is expected to know?

And, of course, you should link to the sites of the major origami organizations:

...and doubtlessly many others!

Is the spanish origami association's website still running? - you might want to include them, as there are a few hidden gems in their pages. just search up pajarita on google to go to their website (if it's still running).
