welll i did something completely wrong beacause mine looks like some wierd thing with four legs a piece of pie for a tail and a pinnochio nose and two pointy humps on its back

The "center" of this model is the tip of the bird base at the bottom, the one close to the center of the paper. You need to have that point stand out.
Collapse the bird base. The mentioned tip is going to be the point where the paper reaches its maximum height, meaning that from then on, the paper kind of folds back, behind the already folded bird base.
I am almost sure you won't get what I mean but I can't find a better way to explain it.
