I have seen two versions of the CP for Brian Chan's mayfly but not sure which one to fold...

The first one seems to have more detail in the head. I'm honestly not sure which one is newer, but I'd go with the first one you linked if I were you.

They are the exact same thing. The second one is just artwork, meant for people who don't know how to fold crease patterns but just think they look cool. The first one is the one I would use, because you're right; the left is the base and then all you have to do is sink it to make it look like the right side.
