Christmas and Chanukah origami

I'm teaching a Christmas/Chanukah origami class soon -- can anyone recommend models appropriate to a beginning-to-intermediate audience?

What about Jeremy ShaferÂ´s Star of David, or maybe sonobe modules?
This site has an own section for very simple christmas models.
