I would not call that origami, personally...origami is folding paper, and that is clearly not paper-it is strips of (the leaves or bark?) of some plant. Also, that technique looked more like weaving. However, that is not to say that that couldn't be utilized in an origami model. Something box-pleated with lots of thin flaps could have a section of it woven as in that video.

At any rate, that was very interesting! Welcome to the forum!

Yeah, I wouldn't call this origami, myself.
I'd definitely call this weaving, which is an art in it's own right.

It's interesting, and thank you for sharing it, but origami it isn't. :)

I know this is an old topic and i hate to bump old topics but i think i have some relevant information to what this actually is!
i was looking around quite recently and came across a japanese art called "Mizuhiki" which to my understanding is the art of weaving/knotting ribbon or paper cord made from washi into object so i thought i would post some links
