Toucan Step 12 (Montroll "Origami for the Enthusiast")

I don't understand how to make a vertical fold, rather than one on an angle. I appreciate any help.

At the bottom of the vertical fold, you will have to squash the paper into a little triangle. (Spread fold? I forget what this is called.) Like this, seen from the inside of the neck:

This thins the neck appropriately. (I've only done one side here, seen from the outside, like the diagram.)
