Kota Imai's Sushi Model

I saw photos of Kota Imai's amazing sushi model and had to fold it. I got the CP from his flickr and flat folded the model entirely but I can't figure out how to finish the model. I see what parts (the triangles) become the "rice" and what part becomes the "fish" and that the color side needs to be folded over to give the fish color. However, I can't figure out how to
1. Make the model 3D and have it keep its shape
2. fold over the fish side and shape it so it extends over the "rice" and
3. fold in the ends of the rice parts so that the round sides are sealed up.
Also not sure what kind of paper I should use, although I've seen people use ordinary kami paper, rice paper, and even tissue foil to make this model.

Any help would be much appreciated.

honestly idk too much. I'd advise trying to fold the model with paper with different colours on both sides and for the "shape", try making it like a modified rectangular prism (like make it into a cube like shape, stretch it, and curve the ends if that makes any sense. for the part where the fish extends over the rice, I believe it is actually a pleat starting FROM the rice (just a single one) to make the fish seem like it is a separate piece of paper. I also think people used glue to hold its shape. hope this helps

I folded this one a while back. The fish part does actually fold back on itself to get the color change. For lack of a better explanation, it looks kinda like the character δΉ™, if that makes any sense. Another tip is to stuff the rice part with a ball of cotton or toilet paper, it will hold its shape much better. Also consider using glue (mc, if you have it) as Mewmew suggested.
