can someone help me with Brian Chan's Rose?

Hi everybody! :D can someone help me to make Brian Chan's rose.
At first, i'm doing fine but i stuck here,

Well... that would be an open pleat sinking... Just open up that par of the paper and follow the crease that you see and pleat away~!

While we're on the subject, I've had terrible trouble with the step that calls for folding down the sepals. The ones in the middle refuse to fold sideways.

Hi,

I'm doing okay with this do far, but I don't understand step 44. It seems like it should be straightforward but if I reverse the top, it'll make the flower the same colour as the stem, won't it? Is it a series of multiple reverse folds to lock the top in place or something?

Diagrams are in the Tanteidan Convention book 12.
As for step 44, it's an outside reverse, not inside, you just fold 2/4 leaves to the back.

Hey chukh1993, welcome to the forum.

If I remember well it's like this:
In step 37 you first have to make sure you're looking from the correct side into the flap. You should see one long (narrow) flap in the middle, which prevents you from squashing the corner and having a symetrical arrengement of flaps. The center flap should look like this ^ then you sink it and it'll should look more or less like this M , the sink fold actually is much like a squash-fold.
