I need to use better paper...Honestly, my current paper becomes FAR
to thick during complex Origami.

Anyway, that frog looks brilliant, very animated, filled with character and personal touches. I also like the "Look!" incarnation, very original model, you folded it well, too.

large, thin, and strong.

that said, you can practice folding the ancient dragon with anything you please; it just won't be presentable. it's just that the model will become very thick and hard to manipulate with something like tant, particularly the forelegs.

would it make it more suitable if the tant paper was 30in. x 30 in. ?

Not the size makes the difference but the thickness. The Ancient dragon gets very thick in the end due to many layers. Tant paper is 78gsm, nearly as thick as copy paper. For the Ancient Dragon you want a paper no thicker than 40gsm like for example two layers of tissue paper glued together with methyl cellulose. The Tant paper isn't really bad, you can use it for lots of other models, but it is definitely not suitable for the Ancient Dragon.
